In the heat of Arkansas summer, vegetable gardens tend to show out in a large way. So large that you may be running out of ideas on how to cook or serve up your favorite produce in new, unique ways... Believe me- been there, done that!
If you’ve ever grown cherry tomatoes or zucchini, then you know just how abundant your crop yield can be. You’ll be stocking the fridge beyond capacity and salvaging room with what’s left of your counter space. You’ll give some to your friends, your family, and somehow are still left with a colossal bounty. So what are you to do with it? This quick recipe creatively utilizes some of that produce as fresh ingredients while creating a tasty dip unlike any other.
Smoky Salsa Blend
Ingredients:
-1 large zucchini
-1/2 yellow onion
-6 cups cherry tomatoes
-3 jalapeños (use more/less at your discretion)
-Juice of 1 lime
-1 TB garlic powder
Recipe Notes:
Slice up the vegetables and pulsate in your favorite blender. For a thicker consistency, you may also use a food chopper for this step. Add the Bourbon Barrel Smoked Chef’s Blend and other seasonings to the mixture until all ingredients are integrated well together. Salsa can be served at room temperature or presented chilled. Enjoy with your favorite tortilla chips or garnish over rice!
