This coffee is depulped, but the pectin layer of the fruit remains on the outside. The seeds are then dried on a covered raised-bed for an average of fifteen days. The processing impact in the final cup is noticeable, with flavor indicating a balance of fermentation and variety-specific characteristics within the overall cup profile.
A stalwart offering year after year, this macro-lot from the Aponte Village in Narino is intensely sweet in the cup, balanced by a tart, citric acidity. Processed in a unique way, this red-honey is partially dried before it is depulped, giving it a layered, fruited complexity and heavy tactile.
Oftentimes there are plots on small-holder farms, (coffee farms at or under 4 acres) where the coffee planted is interspersed with several varieties that go largely undocumented. These mixed variety lots are common across origins like Colombia and Peru, and whenever we happen upon one, we label it as mixed varieties, for obvious reasons.
